Come Una Volta was founded in 1984 as a family owned bakery focused on the production of piadinas, the traditional flat bread from Emilia Romagna. The brand’s name translates to ‘How it was once done’, referring to the use of antique grains and the slow baking procedure adopted, just as it was done in the olden days. Throughout the years Come Una Volta has specialised in the production of organic piadinas removing yeast, palm oil, trans fats and using only flour made from wheat, spelt, Tuminia and Khorasan Kamut grains.
With the same approach a variety of unleavened bread products have been developed, which are ideal for low sodium diets. The brand is also renowned for its kilometer zero piadina made with milk, flour and animal fat sourced by local farmers. This piadina with a lower carbon footprint is rich of taste and reflects the full heritage of a traditional product entirely made with ingredients from the Romagna region. Since its incorporation into Artigianpiada in 2014, while maintaining the same recipes and baking procedures, Come Una Volta has had the opportunity to leverage on a wide retail network and an efficient distribution service across Italy and Europe.
